Authentic Italian Foods: Chicken Parmesan

Sometimes we have a stormy day that comes as a blessing. All we want to do is watch the wild weather from the confines of our home. Open the freezer, preheat the oven, plop down on the couch, and binge some Netflix (for as long as you have power, anyway).

If this is your jam, make a stop at Rosa’s Food Shoppe the night before, so you can stock the fridge or freezer with some authentic, scratch-made, ultimate comfort food: chicken parmesan. Just make sure you have plenty of grated parmesan and mozzarella cheese! This makes the day seamless and relaxing, and less of a hassle if you don’t want to cook. When we are worried about losing power, sometimes we will even cook the chicken parmesan very early in the morning and eat it throughout the day. This has been a great strategy, especially with those unpredictable kids’ appetites.
