Cranberry Vinaigrette

Cranberry Vinaigrette

  • Cranberry Syrup
    • 1 QT cranberries
    • 2 cup sugar
    • ½ cup salt
    • Water to cover
    • 1 grapefruit – zest + juice
    • 2 oranges – zest + juice
    • 2 limes – zest + juice
    • 2 lemons – zest + juice
  1. Combine all ingredients in a sauce pan. Bring to boil, reduce to simmer and reduce to syrup consistency.
  • Vinaigrette
    • 1 shallot – finely diced + place in warm water
    • 1 clove garlic – finely diced
    • 1 t oregano
    • 1 t garlic powder
    • 1 t coriander
    • 1 cup cranberry syrup (from above)
    • ½ cup fresh OJ
    • ½ cup oil
    • Pinch fresh thyme
    • ½ cup white vinegar
    • ½ cup sherry vinegar
    • Salt + pepper
  1. Combine all ingredients except oil into blender.
  2. Blend to combine, then slowly drizzle oil in running blender until you achieve desired consistency. (coat a spoon)
