Sweet Rice Pudding for Easter and Christmas

Ingredients
- 1 cup rice
- 1 cup sugar
- Peel of 1 lemon grated
- 1 teaspoon salt
- 2 cups water
- 3 cups milk (or non-dairy milk) plus 2 tablespoons warm milk (or non-dairy milk)
- 8 tablespoons butter
- 3 egg yolks (or vegan Boca Doce flan Caramel packet)
- Cinnamon to taste and decorate
Instructions
- Bring water, rice, lemon, and salt to boil. Lower heat, simmer for 5 minutes until rice swells.
- Add butter, 3 cups milk, and sugar. Mix, bring to boil. Once boiled,bring to medium-low heat. Simmer until cooked thoroughly and rice congeals. Mixcontinuously to avoid burning. Taste to check rice.
- Mix egg yolks with 2 tablespoons of warm milk. Mix into rice quickly toavoid cooking egg. Same instruction for flan powder alternative.
- Continue cooking for five minutes. Take from heat, let sit for twominutes. Portion into bowls or ladle onto platter. Sprinkle with cinnamon. Mixturewill firm up when cooling.
