Paradox Acres Meatloaf

This recipe comes compliments of Shaun Van Laarhoven, Kitchen Director and Executive Chef at Round the Bend Farm, a Center for Restorative Community.

Ingredients
  

  • 1 to 2 tablespoons vegetable oil
  • 1 onion, finely diced
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon minced fresh ginger
  • 1 pound Paradox Acres ground pork
  • 1 pound Paradox Acres ground beef
  • 1 egg
  • 1 cup breadcrumbs
  • 1 teaspoon five-spice powder
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons soy sauce or tamari
  • ½ cup ketchup

Instructions
 

  • Switch oven on to 350 degrees.
  • Heat vegetable oil in a medium saute pan set on medium. Add the onion, garlic, and ginger, and cook, stirring, until softened. Set aside.
  • In a large mixing bowl, combine the pork, beef, egg, breadcrumbs, five-spice powder, sesame oil, and soy sauce or tamari. Clean hands are the best tool for the job. As it comes together, work in the sautéed mixture.
  • Press mixture into a 9” X 9” square baking pan. Spread ketchup on top
  • Bake for 45 to 50 minutes, or until it reaches 140 degrees in the center.
