This humble Irish favorite is named for the cheerful sizzle and squeak of potatoes and vegetables frying together in the pan.
Servings 4

Ingredients

  • 25 grams/1 ounce butter
  • 1 small onion thinly sliced
  • ½ pound diced thick cut bacon
  • 1 leek diced
  • 1 tablespoon chopped garlic
  • 1 small head green cabbage, chopped (1”squares approximately)
  • ½ pound cooked small potatoes
  • 2 tablespoons wholegrain mustard
  • 2 tablespoons red vinegar
  • ½ bunch tarragon chopped
  • Salt and pepper to taste
  • 2 free-range eggs

Notes

Heat the butter in a non-stick pan. Fry the onion, bacon, leek, and garlic until slightly softened, then add the cabbage and potatoes. Add mustard, vinegar, and the herbs. Season well with salt and pepper.
Smash the potatoes as they cook with the cabbage for 10 to 15 minutes to allow the mixture to cook through. If mixture appears to become dry, add a little water and continue cooking until cabbage is cooked. Adjust seasoning to your liking, cover and keep warm, while you fry the eggs.
In a separate pan, heat a little more oil. Break the eggs and fry to your liking. Spoon the bubble and squeak into bowls and top with the fried eggs to serve. Pickled red onion is a nice touch to garnish with, as the acid complements the recipe well.
