  • 3 medium to large heirloom tomatoes, chopped/diced
  • ½ medium onion, diced
  • 2 garlic cloves, minced
  • 1 small bunch of cilantro, chopped
  • 1 jalapeño, seeded and chopped
  • juice of 1 to 2 limes
  • kosher or sea salt to taste
  • optional:
    sweet corn cooked and sliced from the ear cooked black beans, or chopped mango, avocado, or tomatillos

Mix, adjust seasonings, enjoy.
