Trillium Announces Grand Opening of New Brewery and Restaurant

Canton, MA: Kicking off the summer season, Trillium announced last week the opening plans for their newest property at 100 Royall Street in Canton, nestled into the base of the Blue Hills Reservation. This 20-acre property will serve as their primary hub, offering a unique expression of New England cuisine, in addition to centralizing production for beer, wine, and spirits. With the ability to host community and private events in a variety of indoor and outdoor settings, this expansive footprint holds significant potential for a truly bespoke experience. After acquiring the property a little more than two years ago, this opening marks the first phase of a multi-year transition into their forever home.

Trillium Canton breathes new life into the former industrial space, now designed to welcome the community with farm-grown ingredients and a diverse selection of handcrafted food and beverages to please any palate. Anchored by wood-fired copper clad pizza ovens and indoor and outdoor smokers, the opening menu will feature pizza and barbeque expertly crafted by an impressive culinary team. “This move is a huge step towards realizing the original vision JC and I had for Trillium. We’ve dreamed about creating a special place for others to share our beers with their friends and family,” said Founder Esther Tetreault. “Now Trillium has become so much more; we’re crafting inspired foods we love and exploring fermentation beyond beer, while remaining true to our roots and values.”

In addition to the restaurant and taproom, a 7,500 square foot patio and beer garden offer stunning views during every season. Large windows spill light into the restaurant and showcase the pilot brewery, fermentation room, and wild cellar. Semi-private spaces are available for groups in an intimate barrel room, as well as on the mezzanine overlooking the main bar.

The newest Trillium experience will combine existing farmhouse brewing practices with a true agricultural approach to food and fermentation. “We’re finally able to create a complete chain, from our biointensive regenerative agriculture program at the farm to milling on-site for house-fermented pizza and beer. We’ll offer fresh pasta, wood-fired pizza, and beers brewed with our own heritage grains, fruits, and house yeast strains,” remarked Tetreault. In addition, the culinary team at Trillium’s new restaurant will also feature slow-smoked meats and expand with farm-grown menu items throughout the harvest season.
