Note: Glamping recipes will have a bit of sophistication in the preparation and glamour in the presentation. Ingredient measurements are flexible, the recipes will be delicious no matter the proportions.
- Carrots, washed, peeled if preferred
- Olive oil
- Sea salt
- Whole coriander seeds
- Limes
- Shredded Cotija cheese
- Homemade mayo (or, if store-bought, Mike suggests Sir Kensington’s)
Halve or quarter carrots lengthwise into even sizes, and toss in olive oil and salt. Place in a pre-heated hot cast iron pan either on an outside grill or in the oven. Roast, tossing a bit, until they start to char a little.
Meanwhile, toast some coriander seeds lightly in a dry pan, then quickly crush them in a spice grinder or mortar.
In a small bowl, squeeze fresh lime juice into a dollop of mayo.
Place the carrots onto a platter. Garnish with lime mayo, Cotija cheese, toasted coriander and some lime zest.
