Roasted Beet Salad
Less of a salad and more of just a delicious combination, this recipe is easy to make and a great side dish or snack.
- 6 medium sized beets
- 15 garlic scapes*
- olive oil
- salt, to taste
- Peel and slice beets. We used a mixture of regular and golden beets, but which type you use is up to you. Toss the beats with olive oil. Cook for 15 minutes at 350° in an air fryer.
- Trim the ends off of the garlic scapes and cut into inch long segments. Drizzle with olive oil and cook separately from beets for 5 to 10 minutes.
- Combine the beets and garlic scapes and add salt to taste before serving.
*Garlic scapes seem to stay fresh for a really long time in the fridge. Stock up in spring and use all summer.
