  • Tender red radishes
  • Mint leaves
  • Soft goat cheese

Slice the radish thinly with a knife or mandoline and soak 10 minutes in ice water.

Slice mint into a thin chiffonade.

Drain radishes and pat dry in a towel.

Place a dollop of the goat cheese on each slice of radish and garnish with the mint.
