• A few leaves fresh basil, plus a pretty wee sprig for garnish
  • 2 teaspoons white sugar (organic preferred for flavor)
  • half a lime
  • 1 jigger good quality white rum
  • club soda

In a tall glass, muddle the tender parts of the basil leaves briefly with the sugar. Squeeze in the lime and agitate until sugar is completely dissolved. Add a few ice cubes and the rum and stir. Top up with club soda and decorate with basil.

Makes one refreshing libation.
