
Paradox Acres Meatloaf
This recipe comes compliments of Shaun Van Laarhoven, Kitchen Director and Executive Chef at Round the Bend Farm, a Center for Restorative Community.
Ingredients
- 1 to 2 tablespoons vegetable oil
- 1 onion, finely diced
- 1 tablespoon minced fresh garlic
- 1 tablespoon minced fresh ginger
- 1 pound Paradox Acres ground pork
- 1 pound Paradox Acres ground beef
- 1 egg
- 1 cup breadcrumbs
- 1 teaspoon five-spice powder
- 2 teaspoons toasted sesame oil
- 2 tablespoons soy sauce or tamari
- ½ cup ketchup
Instructions
- Switch oven on to 350 degrees.
- Heat vegetable oil in a medium saute pan set on medium. Add the onion, garlic, and ginger, and cook, stirring, until softened. Set aside.
- In a large mixing bowl, combine the pork, beef, egg, breadcrumbs, five-spice powder, sesame oil, and soy sauce or tamari. Clean hands are the best tool for the job. As it comes together, work in the sautéed mixture.
- Press mixture into a 9” X 9” square baking pan. Spread ketchup on top
- Bake for 45 to 50 minutes, or until it reaches 140 degrees in the center.
