You can’t get any closer to an authentic farm-to-table experience than the seasonal, prix fixe dinners offered at Just Right Farm. From mid- June through September, Kimberly Russo, who owns the farm along with her husband Mark, welcomes guests to the stunning screen house for what she calls a “contemporary elegant dinner party.” Experiences include dinner in the screen house on Friday and Saturday evenings, or perhaps an even more intimate Chef’s Table, and you can even book the Farmhouse Suite for an overnight stay.

Kimberly reports guests are wowed by “the juxtaposition between the 300-year-old farmhouse, the goats, and the contemporary dining experience.”

In a soft accent hinting at her Kentucky roots, Kimberly observes that Just Right Farm “is the culmination of all the things I do. I’m a chef. I’m a gardener.” This talented woman is also a furniture maker who built the restaurant’s tables as well as the furniture in the farmhouse suite. Her sense of style imbues the buildings and grounds, as well as the food, with a kind of casual elegance. Kimberly and her small staff cultivate five of the farm’s ten acres. They use organic growing practices, raise about 90% of the food served at the restaurant. Meat, dairy, seafood, and some fruit are often purchased from other local farms and purveyors.

The menu changes weekly and is centered on whatever produce is at its peak in the fields. Depending on the season, favorite dishes include house-made duck-egg tagliatelle pasta with chive pesto and spring greens to seared Northeast Family Farms pork rib chop. Along with vinegar greens, crisp fingerling potatoes, Brussels sprouts, and smoked chili peppers.

As Kimberly notes, “The kitchen informs the fields. It is very satisfying to know that I love this tomato (variety) and can make sure we grow enough.” After a morning spent in the fields, Kimberly heads to the kitchen where, along with two other chefs, she creates the evening’s five-course meal. And in a gesture that conveys how much they valued the evening’s experience, Kimberly notes that her guests often stand up as the meal is drawing to a close and “say thank you for having us.” It lets her know that “they value the experience of being on a farm, an elegant farm.”
