Husband and wife team Kevin and Shannon Burke’s recently opened tap room, The Fermentary, is located just off Rt. 123 in Hanover. The Fermentary offers a variety of beer and wine, snacks, and, of course, Hot Sauces. The couple’s focus is on quality ingredients to produce sauces full of flavor and free from additives. Their unique fermentation process adds beneficial bacteria which enhances the complexity, makes it easier to digest, and increases the shelf life. They offer five flavor profiles with increasing levels of heat.

The Verde Serrano has a tart tomatillo and jalapeño heat, creating a welcoming and warm green sauce. The Mango Scotch Bonnet adds a touch of island flare without being overly fruity. The Thai Chili Habanero shouldn’t be restricted to just Thai food. It brings the great flavors of Asian-style heat which can add depth to almost any meal. Like the Mango Habanero, the Pineapple Habanero transports you to a tropical retreat, whether it’s awakening your morning eggs or elevating your chicken tacos. My favorite was the Original Habanero, a straightforward bold and flavorful sauce that can match any meal, adding the right amount of heat without overpowering the dish. Finally, there is the Ginger Habanero. Their hottest offering provides a balanced heat with a subtle ginger and garlic bite, perfect to add a little exotic eastern influence to your table. You can purchase all the sauces online, or drop into The Fermentary for some lively conversation, maybe a cold beer or glass of wine, to choose your favorite.
